Recipe: Very Cherry Strawberry Cupcakes


Very Cherry Strawberry Cupcakes

Difficulty Level: Easy

1 (18oz) box Cherry Chip/ cherry-flavored cake-mix
1 (small) box cherry powdered gelatin
3 eggs
1/3 c oil
1& 1/4c water
Fresh strawberries (w/ tops cut off)
1 recipe rose buttercream icing (seen here )

1) In medium-sized bowl (or stand-mixer), mix together: cake mix, gelatin, eggs, oil, and water. 30 seconds on low, 2 minutes medium-speed.
2) Fill batter 2/3 - 3/4 of the way in baking cups (in cupcake/ muffin tin)
3) Bake for 17-22minutes or until a wooden skewer comes out clean.
4) Once bakes, let cool completely before piping icing on top.
5) Decorate with rose buttercream that has been colored green, and top off with a fresh strawberry.
